Consommé of caramelised onion, thyme and local mushrooms
with sautéed mushrooms on sourdough with grilled
triple cream brie and smoked salt

Double baked soufflé of roquefort cheese, peppered caramelised
walnuts, Sauternes poached pears and truffle vinaigrette
OR
Poached egg on asparagus with a hazelnut beurre noisette and shaved parmesan with toasted brioche crumbs

Mains
Fillet of local Angus beef, caramelised onion, cafe de Paris
and French fries, with watercress and parsley salad

Panfried crispy skinned salmon, écrasée of baby potatoes,
prawns and crispy pancetta, beurre rouge

Roast ballotine of free range chicken, pomme purée, fricassée
of chestnuts, mushrooms and lardons with truffle jus

Mille-feuille of chocolate mousse, ganache, creme Chantilly,
with chocolate sorbet
